Turkey Medallions

Serves 4

Ingredients: 
  • 1 1/2 lbs turkey breast
  • 1/2 cup flour
  • 6 Tablespoons butter, divided
  • 1 1/2 cups fresh mushrooms, sliced
  • 1/4 teaspoon dried tarragon leaves
  • 1/2 cup dry vermouth
  • 1 2-oz jar sliced pimiento, drained
  • salt & pepper to taste

Instructions: 
  • If not already sliced, cut the turkey breast in 1/2" slices across the grain.
  • Pound sliced turkey to 1/4" thickness with meat mallet. 
  • Coat the turkey in flour, evenly coating all sides.  
  • Melt 3 Tablespoons butter on medium-high heat. Saute turkey until done (about 3-4 minutes per side). 
  • Remove turkey from the pan and place on plate. Cover with foil to keep warm. 
  • Reduce heat to medium and melt remaining 3 Tablespoons butter in the same pan that turkey was cooked in.
  • Add the mushrooms and saute for about 3 minutes. 
  • Add in tarragon, vermouth and pimento and boil for about 2 minutes. 
  • Add salt & pepper to taste. 
  • Pour sauce over turkey and serve!
