If not already sliced, cut the turkey breast in 1/2" slices across the grain.
Pound sliced turkey to 1/4" thickness with meat mallet.
Coat the turkey in flour, evenly coating all sides.
Melt 3 Tablespoons butter on medium-high heat. Saute turkey until done (about 3-4 minutes per side).
Remove turkey from the pan and place on plate. Cover with foil to keep warm.
Reduce heat to medium and melt remaining 3 Tablespoons butter in the same pan that turkey was cooked in.
Add the mushrooms and saute for about 3 minutes.
Add in tarragon, vermouth and pimento and boil for about 2 minutes.
Add salt & pepper to taste.
Pour sauce over turkey and serve!
