1 cup canned black beans, rinsed and drained (use seasoned black beans for additional flavor)
1/4 cup guacamole
Instructions:
Preheat oven to 375 degrees F.
Cook rice according to package directions (about 30 Minutes).
Lightly spray baking sheet with cooking spray. Spread the corn on the sheet and roast until golden brown (about 15 minutes).
Combine roasted corn with tomato, onion, lime juice, cilantro, jalapeno, cumin and salt.
Warm beans.
Assemble bowls by spooning rice, beans, corn salsa and guacamole into 2 bowls.
