Vegan Sweet Potato Waffles

DIETS: VG VT
Makes 4 large round waffles or 12 small square waffles
Time: 40 minutes

Ingredients: 
  • 2 cups flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • Mix 3 Tablespoons ground flaxseed with 6 Tablespoons water and let sit for 10 minutes to set before mixing in
  • 3/4 cup cooked mashed sweet potatoes (cooled a bit)
  • 1 1/2 cups plain vegan yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup almond or oat milk
  • 3 Tablespoons maple syrup
  • 1 1/2 teaspoons vanilla extract
  • Desired toppings (syrup, peanut butter, nuts, fruit, etc)

Instructions: 
  • In large bowl, mix all dry ingredients (flour, baking powder & salt). 
  • In separate large bowl, mix flaxseed mixture, sweet potato, yogurt, oil, milk, syrup & vanilla. 
  • Add wet ingredients to dry ingredients and mix until moistened and thick.
  • Drop batter onto hot waffle iron and cook as directed for your particular waffle maker.  (May need to do this in batches, keep done waffles warm in oven that has been preheated, then turned off).
  • Top with desired toppings and serve immediately
