Vegan White Chili

DIETS: LC GF VG VT
Serves 6

Ingredients: 
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 Tablespoon olive oil
  • 2 1/2 cups water
  • 1 can cannellini beans, rinsed & drained
  • 1 can garbanzo beans, rinsed & drained
  • 1 can corn (white or yellow), drained, or 1 1/4 cups frozen corn
  • 1 can (4oz) chopped green chilies
  • 3 teaspoons chicken or vegetable bouillon granules
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric

Instructions: 
  • In small skillet, sauté onion and garlic in oil until onion is tender.
  • Transfer to a slow cooker. Stir in remaining ingredients. Cover and cook on low for 7-8 hours.              
OR (non-crockpot option)
  • In soup kettle, sauté onion and garlic in oil until onion is tender.
  • Add all remaining ingredients and bring to a boil.
  • Reduce heat and simmer for at least 30 minutes.
