Vegetarian Chili (V, GF)

Serves 4

Ingredients: 
  • 2 Tablespoons olive oil
  • 1 white or yellow onion, chopped
  • 1 garlic clove, minced
  • 2 tomatoes, chopped
  • 1 4-oz can chopped green chilies, undrained
  • 1 Tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 15-oz can red beans, undrained
  • 1 15-oz can white beans, undrained
  • 1/4 cup chopped fresh cilantro

Instructions: 
  • Heat oil in large saucepan over medium heat; cook and stir onion until soft.  
  • Add garlic and cook for 1 minute.
  • Stir in tomatoes, chilies, chili powder and cumin.  Bring to a boil. 
  • Add beans with liquid.  Reduce heat to low. 
  • Cover and simmer 15 minutes, stirring occasionally.  
  • Garnish with cilantro.
