Vegetarian Sliders

DIETS: LC VT
Serves: 6
Time: 45 minutes

Ingredients: 
  • 1 package of 12 pull-apart dinner rolls (or 6 regular hamburger buns)
  • 3 Tablespoons mayonnaise
  • 3 Tablespoons pesto (store bought or homemade)
  • 1 1/2 cups chopped artichoke hearts, drained
  • 3/4 cup roasted red peppers, drained and sliced
  • 1/3 cup chopped pepperoncini, drained
  • 6 slices provolone cheese
  • 3 teaspoons olive oil
  • 1/4-1/2 teaspoon Italian Seasoning

Instructions: 
  • Preheat oven to 350F.
  • If using pull-apart rolls, carefully cut through them horizontally so there is a top half and bottom half.  If using hamburger buns, slice each in half.
  • Place the bun bottoms in a baking dish or cookie sheet.
  • Mix mayo and pesto in a small bowl and spread over the bottoms.
  • Top with artichokes, peppers, pepperoncini and cheese.
  • Cover with the top halves of the buns.
  • Brush the tops with oil and sprinkle with the Italian Seasoning.
  • Bake 10-15 minutes or until cheese is melted.
