1 medium head cauliflower or broccoli (or combination of both)
4 Tablespoons butter
1/4 cup flour
2 cups whole milk
1 teaspoon salt
1/8 teaspoon pepper
1 6-8 ounce package stuffing mix (seasoned)
1 cup water
1/2 cup butter, melted
Instructions:
Preheat oven to 350F
Break veggies into bite-size pieces and cook until just tender. (Can also roast if you have extra time!)
Place drained veggies in a 9x13 pan (or 2 quart casserole dish)
Melt butter in a medium sized saucepan and slowly whisk in flour until fully mixed
Add milk and bring to a boil, whisking constantly
Reduce heat to med-low and simmer until thickened
Pour over veggies in pan/casserole dish
Mix the stuffing mix, water and butter together in a medium bowl and mix well
Spoon stuffing mixture on top of veggie mixture, pressing down to even out if necessary
Bake at 350F for 30-35 minutes
