Veggie Casserole

Time: 1 hour 15 minutes

​Ingredients: 
  • 1 medium head cauliflower or broccoli (or combination of both)
  • 4 Tablespoons butter
  • 1/4 cup flour
  • 2 cups whole milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 6-8 ounce package stuffing mix (seasoned)
  • 1 cup water
  • 1/2 cup butter, melted

Instructions: 
  • Preheat oven to 350F
  • Break veggies into bite-size pieces and cook until just tender.  (Can also roast if you have extra time!)
  • Place drained veggies in a 9x13 pan (or 2 quart casserole dish)
  • Melt butter in a medium sized saucepan and slowly whisk in flour until fully mixed
  • Add milk and bring to a boil, whisking constantly
  • Reduce heat to med-low and simmer until thickened
  • Pour over veggies in pan/casserole dish
  • Mix the stuffing mix, water and butter together in a medium bowl and mix well
  • Spoon stuffing mixture on top of veggie mixture, pressing down to even out if necessary
  • Bake at 350F for 30-35 minutes
