Add all other ingredients except butter, salt & pepper and mix well.
Place butter in large skillet. Melt and coat entire pan (including sides).
Add egg mixture and cook over medium heat until the bottom and sides are golden brown (about 3-5 minutes).
Flip half of the omelet over the other half to form half a circle.
Cover and cook over a low heat until egg is set (about 1-2 minutes).
Salt & Pepper to taste.
