Veggie Omelet

DIETS: LC GF KT VT
Serves 2

Ingredients: 
  • 4 large eggs
  • 1 small tomato, diced
  • 1 small avocado, peeled and diced
  • 1 green onion, chopped
  • Dash Turmeric
  • 2 Tablespoons butter
  • Salt & Pepper

Instructions: 
  • Beat eggs in bowl until well mixed.
  • Add all other ingredients except butter, salt & pepper and mix well.
  • Place butter in large skillet. Melt and coat entire pan (including sides).
  • Add egg mixture and cook over medium heat until the bottom and sides are golden brown (about 3-5 minutes). 
  • Flip half of the omelet over the other half to form half a circle.
  • Cover and cook over a low heat until egg is set (about 1-2 minutes).
  • Salt & Pepper to taste.
