3/4 cup green beans, chopped into bite-sized pieces
3/4 cup carrot, chopped
1 zucchini or summer squash, sliced into moons
2 Tablespoons olive oil
Salt & Pepper, to taste
1/2 cup broth (chicken, beef or veggie)
2 Tablespoons soy sauce
2 teaspoons fajita seasoning
2 3-oz packages ramen noodles
Instructions:
Preheat oven to 425F
Place red pepper, green beans, carrot and zucchini or squash on a cookie sheet
Drizzle vegetables with olive oil and sprinkle with salt & pepper to taste
Roast for 20-25 minutes or until starting to brown
Meanwhile, add broth, soy sauce and fajita seasoning to a small saucepan and warm over low heat
When veggies are almost done, bring 4-5 cups water to a boil in a medium saucepan. Add ramen and cook for 2.5 minutes.
Drain ramen and put back in saucepan. Add sauce and veggies and toss to mix.
Serve immediately.
