Warm Red Cabbage Salad

Red cabbage is high in Vitamin C, making it an antioxidant-rich, immune booster. In comparison to green cabbage, red cabbage contains 10x more vitamins, cancer-fighting flavonoids, and a winning amount of antioxidants which improve eye, teeth, bone, & immune health.

Ingredients: 
  • 1 garlic clove, minced
  • 1 Tablespoon red wine vinegar
  • 3 Tablespoons olive oil
  • 1 yellow onion, quartered and thinly sliced
  • 1 red cabbage, quartered and thinly sliced
  • Salt/Pepper, to taste
  • 1/4 cup chopped kalamata olives
  • 1/2 cup pecans or walnuts

Instructions: 
  • Heat the garlic, vinegar, olive oil and onion in a large skillet over medium heat.  Sauté for 2-3 minutes.
  • Add cabbage with a little salt and cook until leaves begin to soften and color changes from red to pink.
  • Remove from heat and add the olives, nuts and salt/pepper to taste.
  • Serve warm
