White Bean & Spinach Soup (GF)

Serves 3
Time: 30-40 minutes


Ingredients: 
  • 4 slices bacon, chopped
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 3 teaspoons dried minced garlic
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano leaves
  • 4 cups chicken or vegetable broth
  • 1 cup spinach, stems removed and chopped
  • 1 can cannellini beans, drained and rinsed

Instructions: 
  • In a soup pot, add chopped bacon pieces and cook until crispy. 
  • Add onion, carrot, celery and spices and cook until veggies are tender, about 5-10 minutes.
  • Stir in broth, spinach and beans and simmer 15 minutes. 
  • Salt and pepper, to taste. 
  • Serve.
