White Chili (GF)

Serves 6

Ingredients: 
  • 1 medium onion, chopped
  • 1.5 teaspoons garlic powder
  • 1 Tablespoon olive/canola oil
  • 3 cans (15.5 ounces each) assorted white beans, rinsed and drained (if you'd like a non-vegetarian option, you can substitute 1 can with 1 pound chicken breasts, cooked and cut into cubes)
  • 2 cans (14.5 ounces) chicken broth
  • 2 cans (4 ounces each) chopped green chilies
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream

Instructions: 
  • In a large soup kettle, saute onion and garlic powder in oil until onion is soft (if using chicken, saute chicken with this mixture as well until chicken is fully cooked). 
  • Add the beans, broth, chilies and seasonings.  Bring to a boil.  Reduce heat; simmer, uncovered, for 30 minutes. 
  • Remove from heat and stir in sour cream and heavy whipping cream.
