3 cans (15.5 ounces each) assorted white beans, rinsed and drained (if you'd like a non-vegetarian option, you can substitute 1 can with 1 pound chicken breasts, cooked and cut into cubes)
2 cans (14.5 ounces) chicken broth
2 cans (4 ounces each) chopped green chilies
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
In a large soup kettle, saute onion and garlic powder in oil until onion is soft (if using chicken, saute chicken with this mixture as well until chicken is fully cooked).
Add the beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
Remove from heat and stir in sour cream and heavy whipping cream.
