Whoopie Pies

DIETS: VT
Serves 18
Time: 45 minutes

Ingredients: 
  • 2 cups flour
  • 1 cup sugar
  • 5 tablespoons baking cocoa
  • 1.5 teaspoons baking soda
  • 1 cup milk
  • 1 egg, beaten
  • 5 tablespoons margarine
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 cup marshmallow creme
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (plus a little extra for garnishing)

Instructions: 
  • Preheat oven to 350F.
  • Combine flour, sugar, baking cocoa and baking soda in bowl and mix well.
  • Add milk, egg and margarine and beat until well blended.
  • Drop by teaspoonfuls on an ungreased cookie sheet. 
  • Bake for 10-15 minutes or until edges are crisp.
  • Transfer to a wire rack to cool.
  • Beat butter, shortening and marshmallow creme with a mixer until creamy.
  • Add vanilla and mix until well blended.
  • Add powdered sugar and beat for 2 minutes, scraping bowl often.
  • Spread over half of the cookies and then top with remaining cookies to make a sandwich.
  • Sift a little powdered sugar over the top.
