Wilted Lettuce or Spinach

​Servings: 4
Time: 30 minutes

Ingredients:
  • 3 cups lettuce or spinach, chopped into bite-sized pieces
  • 2-3 Tablespoons onion, chopped
  • 5 slices bacon
  • 3 Tablespoons vinegar
  • 1 Tablespoon sugar (white, brown, honey or maple syrup)
  • Salt & Pepper, to taste

Instructions: 
  • Put greens and onion in a serving bowl. 
  • Cook bacon in a skillet until crisp.
  • Remove bacon to a paper towel-lined plate.
  • Remove skillet from heat and add the vinegar and sugar to the bacon drippings and whisk until combined.
  • Crumble bacon and add to greens mixture.
  • Pour hot skillet mixture over greens and stir to combine.
  • Add salt/pepper to taste.
  • Serve immediately.
