Pickle Deviled Eggs

Ingredients: 
  • 1 dozen eggs, hard-boiled (Perfect Hard-Boiled Egg Recipe)
  • 1 cup mayonnaise
  • 2 Tablespoons mustard (Dijon or whole-grain work best)
  • 2 baby dill pickles, finely chopped (or 4 cornichons)
  • 3 Tablespoons fresh dill, chopped
  • 2 Tablespoons fresh chives, chopped
  • 1/2 teaspoon salt (or more, to taste)
  • 1/4 teaspoon pepper (or more, to taste)
  • Smoked paprika for garnish

Instructions: 
  • Peel the eggs and slice in half.
  • Carefully scoop out the yolks and put them in a medium bowl, mashing well with a fork.
  • Make the filling by adding all remaining ingredients except paprika to the bowl with the yolks.
  • Mix until well combined, smooth & creamy.
  • Transfer the mixture to a piping bag (or can just use a spoon).
  • Pipe, or spoon the mixture evenly into the egg whites. 
  • Garnish by sprinkling with paprika and refrigerate until ready to serve.
