2 cups leftover mashed potatoes (should be VERY stiff/thick)
1 beaten egg
Salt/pepper, to taste
Flour
1/4 cup butter
Instructions:
Mix potatoes, egg, salt & pepper.
Shape into 6 patties, dip in flour and fry in butter (about 5 minutes each side). Flip carefully - they do fall apart easily!
