Potato Pancakes

Serves 6
Time: 30 minutes

Ingredients: 
  • 2 cups leftover mashed potatoes (should be VERY stiff/thick)
  • 1 beaten egg
  • Salt/pepper, to taste
  • Flour
  • 1/4 cup butter

Instructions: 
  • Mix potatoes, egg, salt & pepper.
  • Shape into 6 patties, dip in flour and fry in butter (about 5 minutes each side).  Flip carefully - they do fall apart easily!
