Carefully scoop out the yolks and put them in a medium bowl, mashing well with a fork.
Make the filling by adding all remaining ingredients except bacon and chives to the bowl with the yolks.
Mix until well combined, smooth & creamy.
Fold in the chopped bacon.
Transfer the mixture to a piping bag (or can just use a spoon).
Pipe, or spoon the mixture evenly into the egg whites.
Garnish with minced chives and refrigerate until ready to serve.
