Smoky Deviled Eggs

Ingredients: 
  • 1 dozen eggs, hard-boiled (Perfect Hard-Boiled Egg Recipe)
  • 2 ounces drained jarred pimiento peppers
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt (or more, to taste)
  • 1 3/4 teaspoons smoked paprika
  • 1/2 teaspoon hot sauce
  • 3/4 teaspoon dill pickle juice
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon sugar
  • 1/8 teaspoon pepper (or more, to taste)
  • 2-3 strips bacon, cooked and crumbled
  • Fresh minced chives for garnish

Instructions: 
  • Peel the eggs and slice in half.
  • Carefully scoop out the yolks and put them in a medium bowl, mashing well with a fork.
  • Make the filling by adding all remaining ingredients except bacon and chives to the bowl with the yolks.
  • Mix until well combined, smooth & creamy.
  • Fold in the chopped bacon.
  • Transfer the mixture to a piping bag (or can just use a spoon).
  • Pipe, or spoon the mixture evenly into the egg whites. 
  • Garnish with minced chives and refrigerate until ready to serve.
